Zucchini roll-ups
This recipe was inspired by a dish served by Joanna, my sister (well, technically, a cousin, but we call ourselves sisters and it works), who knows very well how how to serve an impressive dinner cooked in less than 30 minutes…
That summer evening she served goat cheese rolled up in zucchini stripes and goat cheese rolled up in prosciutto ham, all dipped in fresh tomato sauce. It was delicious. So when I got home I wanted to do the same, but while preparing the dish, I realized it would be better to roll it all up together. Soon after I replaced prosciutto with bacon, and at some point I forgot the tomato sauce…
So in the end the dish is very different, but I do remember where the inspiration came from… And it became a regular position on our menu!
Ingredients
- Zucchini, cut into thin slices (3-4 mm thick, NOT mandoline thin)
- Smoked bacon stripes (cold), as many as there is slices of zucchini
- Goat cheese, about half square cm per stripe of zucchini
- olive oil
Instructions
- Heat a pan, pour some olive oil and fry the zucchini slices, one by one, carefully not to damage the slices.
- Keep the slices of bacon in the fridge until the very last moment, then they are easier to separate from each other. Place a stripe of bacon, a stripe of zucchini on it and a piece of goat cheese on top (towards one end of the stripe).
- Roll it up (starting on the side where the cheese is) and insert a toothpick to hold it together.
- Cover a baking pan with baking paper, and place the roll-ups on it.
- Bake in a hot oven (200°C) for around 15 minutes.
