Blueberry pancakes

Pancakes in our house is a tradition. Every Sunday morning, the kids let me sleep as long as I want, and then when I get up, I make pancakes or waffles. I think in the last year, maybe once I didn’t do that, and it was only because we were on a skiing trip and really there was no time or utensils to do it. It did take quite some explanations as to why not…

So in order not to get bored, the pancakes / waffles I make come in different styles and forms. These I personally like best.

And with our big family, including 3 teenagers, I usually make this recipe times 4! If anything is left, it gets eaten through the day, or goes into the lunch box for Monday (rarely).

 

Ingredients:

1 and ¼ cup flour

¼ cup sugar

1 tsp baking powder

1 tsp baking soda

1 pinch salt

1 egg

1 and ¼ cup buttermilk, kefir, sour milk or alternatively normal milk

¼ cup oil

1 cup frozen blueberries

Directions

Mix all the dry ingredients and all the wet ingredients separately. Then mix them all together.

Add a tbs of flour to the frozen blueberries, just to cover them.

Put half of the batter in a separate container and add the blueberries.

Fry on a hot pan on both sides.

Then repeat with the rest of the butter.

Serve with butter, maple syrup and bacon.
