Nasturtium pesto

Joanne, who has such a similar way of seeing things as me, even if we are still so very different on some levels. She is totally into gardening (I am anything but that!) and she grew nasturtiums in the section of her garden that is visible from our patio. Great view she said we will have and we can add flowers to our salads.
Finally the flowers are there and the leaves too! So I whipped up this quick pesto, with interesting flavor, a bit spicy a bit different, something new to taste!
As any pesto, it tastes great on pasta or on fish, I made aubergine involtini with it, enjoy!
Ingredients
- 30g nasturtium leaves
- 20g pine nuts (ideally roasted)
- 20g parmesan
- 10g olive oil
- small piece of garlic (optional)
- salt, pepper
Instructions
- wash the leaves and chop them roughly
- Add all the other ingredients and blend them together
- Serve with pasta, white fish or in some version of amuse bouche, for example wrapped up in aubergines.
