Roasted butternut squash with aromatic couscous and white bean hummus

Ingredients
Roasted squash
- Vegetable oil
- Spices for squash: salt, orange pepper, smoked paprika, dried garlic,
- 1 butternut squash (around 1.2 kg)
- fresh sage (chopped, 6 g)
- Walnuts (40g)
- Honey (20 g)
- Feta (100g)
White bean hummus with dried tomato
- One can white beans (265g) (or you can use fresh beans, but then you need to soak them in advance and cook them)
- Half a clove of garlic
- 30 g tahini paste
- 1 table spoon lemon juice
- 4 dried tomatoes (in oil)
- Salt, pepper
Aromatic couscous
- 200 g couscous
- 250 ml vegetable bullion
- 20 g vegetable oil
- Spices: smoked paprika, dried garlic, dried parsley, salt (you can be creative with the spices you like)
For serving:
- Seeds from 1 pomegranate,
- fresh sage (chopped, 6 g)
Instructions
Roasted squash
- Heat the oven to 200 degrees C
- Peel the squash, remove the seeds and dice into 1.5-2cm pieces. Place in an oiled baking pan.
- Sprinkle some vegetable oil on top and add spices, sage and add chopped walnuts
- Mix it well to cover the squash with spices and the oil
- Pour the honey on top
- Put in the oven for 40 minutes, mix once during that time
- After around 40 minutes, when tender, crush the cheese on top of the squash and put back in the oven for another 10 minutes
Dried tomato white bean hummus
- Drain the beans
- Place the drained beans and all the ingredients in a good blender and blend until smooth
- Correct the spicing if necessary
- Aromatic couscous
Place the couscous in a container which can be closed with a lid
- Add the spices and mix
- Add the oil and the hot bouillon and cover with a lid for 5 minutes
- When ready, mix well to distribute the spices throughout the couscous.
Serving the dish
- On a plate serve the squash bake, hummus and couscous
- Top with pomegranate seeds and fresh sage
