Grilled feta in zucchini

As my meat-eating family comes into the grilling season, I get creative at finding things I can eat with them coming from the same grill, but skipping the meat. And this one builds on my recent discovery that feta is better hot than cold.
I made it grilled, using a metal ‘grilling basket’, supposedly purposed for fish, but really, you can get anything into that basket. You can also roast it in an oven.

Ingredients
- 200 g feta
- 1 zucchini
- 1 tomato or a few cherry tomatoes (optional)
- 2 table spoons olive oil
- grilling spice, or salt, pepper, paprika…
Instructions
- Using a vegetable peeler, cut very thin slices of zucchini, you will need around 20
- Cut the feta into 5 pieces.
- Place 3 slices of zucchini next to each other and one perpendicularly to them.
- Using a brush paint it all with olive oil.
- Add a piece of tomato and wrap it up (see pictures below). Paint again with olive oil.
- Place in the grilling basket, add some spices on each side and grill for a few minutes on each side. If you are baking you will need around 20 minutes.
