As my meat-eating family comes into the grilling season, I get creative at finding things I can eat with them coming from the same grill, but skipping the meat. And this one builds on my recent discovery that feta is better hot than cold.
I made it grilled, using a metal ‘grilling basket’, supposedly purposed for fish, but really, you can get anything into that basket. You can also roast it in an oven.
Grilled feta in zucchini
Appetisers, Main Dish
200 g feta
1 tomato or a few cherry tomatoes (optional)
2 table spoons olive oil
grilling spice, or salt, pepper, paprika…
Using a vegetable peeler, cut very thin slices of zucchini, you will need around 20
Cut the feta into 5 pieces.
Place 3 slices of zucchini next to each other and one perpendicularly to them.
Using a brush paint it all with olive oil.
Add a piece of tomato and wrap it up (see pictures below). Paint again with olive oil.
Place in the grilling basket, add some spices on each side and grill for a few minutes on each side. If you are baking you will need around 20 minutes.
