Grilled feta in zucchini

As my meat-eating family comes into the grilling season, I get creative at finding things I can eat with them coming from the same grill, but skipping the meat. And this one builds on my recent discovery that feta is better hot than cold.

I made it grilled, using a metal ‘grilling basket’, supposedly purposed for fish, but really, you can get anything into that basket. You can also roast it in an oven.

  2. Cut the feta into 5 pieces.
  3. Place 3 slices of zucchini next to each other and one perpendicularly to them.
