Aubergines – chorizo – mozzarella rings

I like aubergines in any form. But they usually need something with a lot of taste to marry it with. This is a perfect combination, soft aubergines, spicy sausage and creamy mozzarella. And it’s so easy!

Ingredients:

1 small aubergine, cut into circles

120 chopped spicy chorizo (I buy it already in slices)

200 g chopped tomatoes (canned or fresh)

2 balls of fresh mozzarella, sliced

Directions

Heat the oven to 220°C

Start by putting the chorizo in a hot pan, when the grease starts to melt, add the tomatoes and cook for around 10 minutes. Spice with salt, pepper, paprika and / or basil

In the meantime, on a separate pan fry the circles of aubergine on a hot, greased pan (add the oil with a brush when needed).

Put the aubergines on a pan covered with baking paper, cover each one of them with tomato-chorizo sauce and a slice of mozzarella.

Bake 10-12 minutes or until the mozzarella is well melted.
