Merlu with asiatic flavours

Ingredients
3 fillets of merlu (European hake according to wikipedia), or any other white fish will do
Stripes of bacon
1 zucchini
1 carrot
Half a red pepper (can be a whole one but I had a half just waiting there to be added)
Coconut cream (I opened a 200ml box but didn’t use it all)
Fresh coriander
Spices (salt, pepper or lemony pepper), olive oil
Directions
Cut the fish into stripes and sprinkle some salt and pepper on it
Using a mandolin cut as many stripes of zucchini and carrots as there is pieces of fish
Lay a slice of bacon, zucchini, fish and carrot on top.
Roll it together and put a toothpick (or 2) to hold it in shape. Repeat with the rest of the ingredients.shape. Repeat with the rest of the ingredients.
Put it all in a greased pan, add leftover zucchini and pepper cut into pieces. Spice the vegetables a bit.
Put it in the oven at 200 degrees for 20 -25 minutes. When it smells yummy and looks like it’s ready – add the coconut cream and bake for 3 more minutes.
Sprinkle some fresh coriander and enjoy!
