Strawberry – white chocolate – cream cheese cookies
Posted in : Dessert, Sweets on by : MayaI loved this recipe (and well, the cookies), because they merry the strawberries (which stay colorful and firm) with creamy cookies, and strawberries like cream 🙂
I must admit these are not my invention, I am not very creative in baking, and I know that in cookies and cakes you’d better follow the recipe than go crazy adding more of this or more of that, so here is where found the recipe here: http://omgchocolatedesserts.com/strawberry-cookies/ and I keeped it almost unchanged (mainly converting the American measures to grams 🙂
So, they are not my invention, but I think they will be a frequent guest at our home!
Ingredients
- 1¼ cup flour
- ½ tsp baking powder
- â…› tsp salt
- ¼ cup butter at room temperature
- 110 mascarpone or cream cheese
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla extract
- ¾ cup chopped fresh strawberries
- 2 tbsp lemon juice
- 140g white chocolate-chopped
Instructions
- Preheat the oven to 180°C
- Line a baking pan with with parchment paper.
- Pour fresh lemon juice over chopped strawberries, drain them after a few minutes.
- Whisk together flour, salt and baking powder and set aside.
- Beat butter with sugar and cheese until it’s light and fluffy.
- Add egg and vanilla and mix well.
- Gradually add flour mixture and mix until it’s well combined.
- Stir in chopped white chocolate.
- Sprinkle strawberries with 1-2 tablespoon flour, toss them until all strawberries are coated with thin layer of flour and then stir them really gently in the batter.
- Place tbsp. of batter onto the pan leaving some space between them
- Place the pan in the refrigerator for 5-10 minutes before baking.
- Bake for 13-15 minutes (until the edges become golden brown). Take them out of the oven even if they look like they are not done! let them cook a few minutes before eating
