The season for asparagus is not very long, so when it is on, I usually end up with a bundle after every grocery shopping. Here is another recipe, simple and allowing to enjoy the freshness of this wonderful vegetable (is it a vegetable actually?).
Asparagus lime soup
1 bundle asparagus
500 ml chicken stock
juice from half a lime
2 tbs olive oil
freshly ground pepper
Chop the asparagus into 1-2 cm chunks
Cook in the chicken stock for around 20 minutes, until soft.
Blend it with an immersion blender (be careful when blending hot liquids!)
Add olive oil and lime juice.
Pour into bowls and add pepper and a large spoonful of sour cream to each bowl.
