It’s almost the summer and I am so into veggies, and especially aubergines! Every time I go grocery shopping, they look so pretty and elegant and I just can’t leave without them. And then I invent what to do with them, and if I use enough cheese and spices, they never disappoint me!
Appetisers, Main Dish
3 mozzarella balls, sliced
tomato sauce (I used ready to use pizza sauce)
Slice the aubergine. Sprinkle some grilling spice on it.
Fry it on a hot, oiled pan. Add more oil if necessary with a brush.
Place the aubergine and mozzarella slices in an oiled, baking pan
