Aubergine parmigiana
Posted in : Appetisers, Main Dish on by : MayaIt’s almost the summer and I am so into veggies, and especially aubergines! Every time I go grocery shopping, they look so pretty and elegant and I just can’t leave without them. And then I invent what to do with them, and if I use enough cheese and spices, they never disappoint me!
Ingredients
- 2 aubergines
- 3 mozzarella balls, sliced
- grilling spice
- olive oil
- tomato sauce (I used ready to use pizza sauce)
- grated Parmesan
Instructions
- Slice the aubergine. Sprinkle some grilling spice on it.
- Fry it on a hot, oiled pan. Add more oil if necessary with a brush.
- Place the aubergine and mozzarella slices in an oiled, baking pan
- Cover it with tomato sauce
- Sprinkle Parmesan on top
- Bake for 20 minutes in 220°C
- Serve with fresh bread and or a salad
