Yes, I know, aubergines again! But I just love them. And I can’t resist! Actually, I don’t even try. This is a slightly changed Nigella’s recipe. Very refreshing and very, very good! It works well as a starter, but on a sunny day it’ll do just as well as a main dish, if you add some focaccia and a glass of cold, white wine.
1 bunch fresh mint
1 chilli pepper, or a little bit of red bell pepper
Slice the aubergines in 0,5 cm slices and sprinkle some grilling spice on them.
Fry them on a an oiled pan from both sides until tender. You may also bake them if you prefer.
Crush the feta into a bowl, add the ricotta, most of the finely chopped mint and pepper. Mix it all together.
Place 2 tbs of cheese mix towards one end of aubergine slice and roll it up.
Repeat with all the other slices and sprinkle some more mint and fine pieces of pepper.
