I had some leftover cheese mix from the aubergine roll-ups and wasn’t sure what to do with it. I found a few red onions, married them together and it was a real treat! The onions carmelised a bit and worked so well with the salty and minty stuffing!
The biggest challenge was to empty the onions to make them into bowls, but in the end it turned out to be pretty easy. I used apple core cutter, but you can also make it work with a small knife. It’s easy.
And then don’t forget to place some mint leaves on the top, it makes the onion look so much better!
