Breaded aubergines
Posted in : Appetisers, Sides on by : Maya Tags: aubergineI think I mentioned already that I like aubergines 🙂 This recipe is another way of preparing this elegant vegetable. I learned it from my mom, although she is no longer preparing them any more. It’s also another favorite of my son, who is a rare 7-year old loving vegetables in all forms.
Ingredients
- 1 aubergine
- bread crumbs
- 2 eggs
- favorite spice: grilling spice or just salt, pepper and sweet pepper (add chilli pepper if you like)
- olive oil
Instructions
- Slice the aubergine (slices should be around 0,5cm thick).
- Place the eggs and spices in a bowl and whisk with a fork.
- Place the breadcrumbs in a separate bowl.
- Heat a pan and pour some olive oil on it.
- Put each slice of the aubergine in the egg mix and flip it to have it all covered with the egg.
- Then place it in the breadcrumbs and flip it to make sure it is all well covered.
- Place the slices in the pan and try on both sides around 3-5 minutes on each side. Add more olive oil if necessary. You may not be able to do all of them at the same time.
- Serve hot as a side or a starter. Or at tea-time if you have a veggie lover at home!
