Refried beans is something I tried in US and I love it since. Back in Europe I look for any opportunity to have anything similar to the tex-mex version I had there. Wrapped up in a tortilla with some cheese is just a perfect comfort food. Or an indispensable element of a ‘Mexican fiesta‘ .
Appetisers, Sauce, Sides, Use of leftovers
2 cans red beans, partly drained
1 small onion, chopped
1 cube stock (I use the jelly version but any will do)
1/3 cup grated cheddar
Heat a pot and add some olive oil.
Throw in the onions and cook until they become translucent.
Add the beans and some of the liquid from the can.
Simmer for 20-30 minutes.
Using an immersion blender mix them into a thick paste, if some chunks are left, that's ok.
Add the chili pepper and other spices if you like.
Blend in the cheese.
Serve with a tortilla, as a dip with chips or as part of a Mexican fiesta
