Refried beans

Back in Europe I look for any opportunity to have anything similar to the tex-mex version I had there. Wrapped up in a tortilla with some cheese is just a perfect comfort food. Or an indispensable element of a ‘Mexican fiesta‘ .
Ingredients
- 2 cans red beans, partly drained
- 1 small onion, chopped
- 1 cube stock (I use the jelly version but any will do)
- 1/3 cup grated cheddar
- chilli pepper
- olive oil
Instructions
- Heat a pot and add some olive oil.
- Throw in the onions and cook until they become translucent.
- Add the beans and some of the liquid from the can.
- Simmer for 20-30 minutes.
- Using an immersion blender mix them into a thick paste, if some chunks are left, that's ok.
- Add the chili pepper and other spices if you like.
- Blend in the cheese.
- Serve with a tortilla, as a dip with chips or as part of a Mexican fiesta
