Melon soup

A perfect dessert for a super hot day (which is what we were experiencing a lot recently). It’s super easy (1 ingredient is a must, 2 ingredients are recommended) and super healthy (no sugar added!).
I remember the fruit soup I was served in kindergarten, sweet cheery or strawberry flavored water with pasta in it. I came a long way since then!
Notes
Prep time is 5 minutes + min 2 hours for chilling
Ingredients
Obligatory
- 1 ripe melon
Recommended
- 1 tbs of fresh, chopped mint leaves
Optional
- 1 tbs of red currant or grenade seeds
If you want to go crazy
- 1 tbs of porto wine
Instructions
- Peel the melon and remove the seeds;
- Chop it roughly;
- Using an (immersion) blender make it into a smooth soup;
- Add the porto wine if you decided to go crazy;
- Chill in the fridge for 2-4 hours;
- Pour into (chilled) glasses (shot glasses work great, wine glasses will do as well);
- Top with mint and berries;
- Serve on a very hot day.
