Quinoa with veggies

You can replace the proposed vegetables with anything else you will find in your fridge, especially peppers, carrots or beans. You can also add freshly fried shrimp or chicken if you don’t care about it being vegan.
Ingredients
- 1 onion chopped
- 2 cloves garlic, chopped
- 2 zucchinis, chopped
- 1 aubergine, chopped
- 6 fresh mushrooms
- 2 cups cooked quinoa
- 4 tbs roasted sesame oil
- 2-4 tbs soy sauce
- 2-4 tbs teriyaki sauce
- 2 tbs roasted sesame seeds
- fresh cilantro, chopped
Instructions
- Heat a pan and add half the oil. Fry the onions and garlic until translucent.
- Add the rest of the oil and the vegetables. Cook until they soften.
- Finally add half the soy sauce and half teriyaki sauce. Stir it well in.
- Add the quinoa, stir it in and cook some more. Verify the seasoning and add more sauces, salt, pepper or whatever other spice you like.
- Top with sesame seeds and cilantro just before serving.
