Roasted pepper tartar in a cucumber bowl

Ingredients
- 1-2 baked peppers (for step by step instructions on how to cook peppers look here
- 1 cucumber
- a little bit of feta cheese
- salt, fresh ground pepper
- Fresh basil or coriander
Instructions
- Cut the cucumber in 1,5 cm thick slices. Using a melon spoon empty the inside as well as you can. It's not difficult.
- Chop the peppers, and spice them with salt and pepper or any other spices that you like. It does need quite some spice as the pepper does not have a very strong taste itself.
- Place the pepper tartar in the cucumber bowls.
- Sprinkle some feta on the top.
- Decorate with fresh basil or coriander.
- Serve cold.

I like baked peppers a lot. I like the color, the texture and the idea that it’s not easy to tell what it really is (well, at least it takes some thinking). The idea came from the fact, that one of my friends doesn’t eat fish, so she would not have the salmon tartar that I was serving so I designed a tartar for her. And it turned out really good!
