Caramelized lime carrots

A perfect recipe for carrots should underline the sweetness and natural flavor, put the carrots in the center of things, just like this one.
Ingredients
- Bunch of carrots, peeled and cut in halves or in quarters
- juice of half a lime
- 1 cup orange juice
- 1 cube chicken stock
- 2 tsp sugar
- butter
Instructions
- Melt the butter in the pan, add the carrots and cook them until all the butter seems absorbed by the carrots.
- Add the orange juice, lime juice and chicken stock cube, simmer for 20-30 minutes, until all the liquid evaporated.
- Add the sugar and let it caramelize on the carrots.
- Serve with lettuce as a center of a salad or as a side dish.
