Carrots. Sweet, beautiful and colorful. Often overcooked, and then losing the color, the sweetness and the crunchiness. A perfect recipe for carrots should underline the sweetness and natural flavor, put the carrots in the center of things, just like this one.
Caramelized lime carrots
Bunch of carrots, peeled and cut in halves or in quarters
juice of half a lime
1 cup orange juice
1 cube chicken stock
2 tsp sugar
Melt the butter in the pan, add the carrots and cook them until all the butter seems absorbed by the carrots.
Add the orange juice, lime juice and chicken stock cube, simmer for 20-30 minutes, until all the liquid evaporated.
Add the sugar and let it caramelize on the carrots.
Serve with lettuce as a center of a salad or as a side dish.
