Refreshing cucumber soup
Posted in : Appetisers, Soup on by : Maya Tags: almond milk, coriander, cucumber, feta, garlicIt’s a soup for a very hot day, it’s really more of hydrating product or a smoothie than a soup, but on a hot day you can have it in a bowl, call it a soup and pretend it’s a full meal!
It works perfectly on holidays and takes very little time to cook but you need a blender! So if you are spending your holidays in a rental location with limited kitchen utensils, make sure you have one in your kitchen before you start chopping the veggies!
Ingredients
- 2 medium cucumbers, peeled and chopped
- 1 cup oatmeal milk (or cream)
- juice from 1/2 lime
- 1 clove garlic, finely chopped
- 1 tablespoon olive oil
- 1/2 cup grated feta cheese
- 1/2 cup chopped cilantro
- finely grated peel of 1/2 lime
- salt and pepper
Instructions
- Place the cucumbers, oatmeal milk (or cream), lime juice, garlic and olive oil in a blender bowl and blend it until smooth.
- Add salt and pepper and (ideally) refrigerate for an 1-2 hours to make sure it is cold when served.
- Pour into bowls and top with feta, cilantro and fresh pepper.
