Roasted peaches with chorizo
Posted in : Appetisers on by : Maya Tags: chorizo, onion, peaches, summerAnd again chorizo, this time with juicy, sweet peaches. A wonderful summer snack (yes, we finally have summer here!). The sweetness of the peach and the spicy chorizo work really well! And perfectly easy to prepare.
A sister recipe to gorgonzola peaches, can just as well be served together.
Ingredients
- 2 peaches
- 6 slices of spicy chorizo
- 2 slices of onion
- 1 tbs olive oil
- fresh ground pepper
Instructions
- Chop the onions and chorizo and throw on a hot, oiled pan. Fry for 2-3 minutes until all the onion becomes red from the chorizo juice.
- Cut the peaches in halves and remove the cores.
- Distribute the chorizo on the peaches and place in a hot oven for around 5 minutes.
- Spice with some fresh ground pepper.
