Tomato carpaccio

This dish is a tribute to tomatoes. To real, good tomatoes. Don’t even try it with the cheap, supermarket, tasteless beautiful red fake ones. No point. But if you have real tomatoes this is the best way to make them shine.
Ingredients
- 2 tomatoes
- a handfuls of arugula
- 1 tbs of creamy goat cheese
- 1 tsp balsamic vinegar
- 1 tsp olive oil
- salt, fresh ground pepper
Instructions
- Slice the tomatoes (not too thin) and place on a plate
- Sprinkle cheese on top, place arugula on top
- Pour olive oil, vinegar, salt and pepper on top
- Enjoy with fresh bread!
