I didn’t post anything in a while. Summer holidays and lots of travel. Lots of eating out and interesting dishes that I will certainly introduce into our menu.
This dish is a tribute to tomatoes. To real, good tomatoes. Don’t even try it with the cheap, supermarket, tasteless beautiful red fake ones. No point. But if you have real tomatoes this is the best way to make them shine.
a handfuls of arugula
1 tbs of creamy goat cheese
1 tsp balsamic vinegar
1 tsp olive oil
salt, fresh ground pepper
Slice the tomatoes (not too thin) and place on a plate
